Chicken Kiev


So I saw a cooking show (DDD)where they made Chicken Kiev. Looked so good so I thought I would give it a shot!  Chicken breast with a bunch of herbs on the inside, breaded and fried!! Here it is!!

First I made the herbed butter. I used a stick, softened.  Chopped parsley, Thyme, I didn't have fresh rosemary so I used dried, and some dill.

Mix it up and then I put it into my long ice cube tray and put it into the freezer to save for later.

It calls for ground chicken. I didn't have any but I had boneless skinless chicken breast. I put it in the food processor and voila!


Since I had the food processor out, I threw the onion in there too.
And then the eggs... I still stuck to my 2 eggs per pound rule. Mixed up my chicken mixture and added a little bread crumbs to help it stick together and some salt and pepper.

Next, you take the chicken mixture, make it into a patty. put one of the frozen herbed butter sticks in the patty and then close it up around it. Make sure none of the butter is showing. It will look like a log.

Take 3 bowls add bread crumbs to one, flour to one and a couple of eggs scrambled in the third.

Dip the Chicken roll in the flour then the egg then the bread crumbs.

 I used a deep fryer and heated up to 325. When the oil was heated I added the chicken in and cooked it up.
It only took about 10 min to cook. I think because the chicken is ground so it doesn't take as long.
 Cook until golden brown. This is the finished product.


And when you cut into all that herbed goodness is on the inside!!

Chicken Parm

Ok, It's Chicken Parm night. Not that it's a special night or anything but.... I made a pot of sauce the other night before I started this blog. I had used plum tomatoes from the garden. The last of them as it is November but I had blanched and pureed them and then froze it. Anyway, you can't make Chicken Parm without homemade sauce. Anyway, I take out 3 bowls, one I put flour in, add some pepper, the second I scrambled 2 eggs with a clove of garlic and the 3rd I added breadcrumbs Italian seasonings and grated parmesan. I cut the chicken breast put them in a plastic bag and pound them out thin. Dredge the chicken in the flour, eggs, and then breadcrumbs. Fry in olive oil Put them in baking dishes I spread sauce on the top, flipped it over and put sauce on the other side. Sprinkled some parmesan cheese on them grated mozzarella. Jellied Cranberry Sauce

I grew up having cranberry sauce from a can on Thanksgiving day. I loved it! I've tried whole cranberry sauce and wasn't a fan. Then I realized I can make my own cranberry sauce! So I few years ago, I tried to make my own. I discovered it's ridiculously easy to make and wow! so much better then the canned stuff I had been eating my entire life. Now, I won't ever eat it from the can again! I make of lot of cranberry sauce. I don't think I have to make this much, I give some away. You don't have to make as much as I do. I started with 44 oz. of cranberrys. I put 3 1/2 cups of water in a large pot added 3 1/2 cups of sugar and brought to a boil. I turned it down to a simmer and listen to the cranberrys pop! I love this part. I stir it up until they stop popping. I used my hand blender to make sure I all the cranberry's were ground up. I then used the juice of one orange, a very ripe, juicy orange. African Chicken

This was the most amazing Chicken!! I actually watched an episode of Diners, Drive ins, and Dives and got the recipe from there. Of course, I didn't have as much cumin as I needed, so I changed and tweaked the recipe and although I never made the original recipe the one I made was fabulous. I use so much Cumin, I need to start buying it in one of those huge containers they sell at BJ's. I thought I had extra down stairs but I didn't. UGH. Anyway here is how I made it. I used 6 thighs and 4 drumsticks I made a paste which was: Cumin about a tablespoon Oregano about 2 tablespoons Pepper teaspoon Salt 2 teaspoons Garlic 1 teaspoon minced Chili powder 1 tablespoon Corriander powder 1 tablespoon mix that together and then add olive oil to make a paste. I put the chicken in 2 aluminum pans and rubbed equal parts of the paste on each piece of chicken until it was gone. I let marinate for an hour.
