Low Country Seafood boil





So I just got back from vacation on the Outer Banks. We stayed in Carova beach where you needed a 4x4 to drive down the beach to get to the house we rented. It was amazing! There were wild horses on the beach, a beautiful sunrise every morning and I even saw a school of dolphins swimming and fishing for their dinner. I hated to leave. But, on the way home, we stopped and picked up some fresh shrimp and clams just off the boat. ( I bought other seafood as well, but that will wait for another meal!)

So what do I make when I get home and it's it cold and dreary out? Yup, a low country seafood boil to remind me of the past week on the beach.

I didn't need to make a lot, so I used 3 ears of corn, shucked and broken into pieces and red potatoes, I used 3 large cut into chunks.

I put that in a large pot, added a red onion cut into chunks, rinsed my 2 lbs of shrimp, and 50 clams. One all in the pot, I added one can of beer, and then covered the rest with water. I added about 4 oz of Old Bay seasoning, a Tablespoon of blackened seasoning, a teaspoon of chicken bullion and a teaspoon of black pepper. I juiced a lemon and added the rind as well.



Bring to a boil and cook until potatoes are tender. In the meantime, I took a stick of butter and added 2 cloves of garlic and melted that in the microwave.


Once the potatoes are tender, I drained the whole pot in a colander and put it back into the cooking pot. I then poured the melted butter and garlic over the whole pot of food.

It was enough to feed at least 4 people! Great Flavor and I got my seafood fix!

This was the most amazing Chicken!! I actually watched an episode of Diners, Drive ins, and Dives and got the recipe from there. Chicken Kiev

So I saw a cooking show (DDD)where they made Chicken Kiev. Looked so good so I thought I would give it a shot!  Chicken breast with a bunch of herbs on the inside, breaded and fried!! Here it is!! First I made the herbed butter. I used a stick, softened.  Chopped parsley, Thyme, I didn't have fresh rosemary so I used dried, and some dill. Mix it up and then I put it into my long ice cube tray and put it into the freezer to save for later. It calls for ground chicken. I didn't have any but I had boneless skinless chicken breast. I put it in the food processor and voila! Since I had the food processor out, I threw the onion in there too. And then the eggs... I still stuck to my 2 eggs per pound rule. Mixed up my chicken mixture and added a little bread crumbs to help it stick together and some salt and pepper. French Onion Soup

I love this classic. I start by slicing 3 large yellow onions and lightly carmelizing them in butter. This brings out the flavour of the onions. After onions are nice and soft and starting to brown, I add red wine. I used about a cup. I used a few dashes of Worcester sauce I added pepper and 32 oz of beef broth. I also add a couple beef bullion cubes as I feel they add a little extra flavour.  While the soup is simmering, I cut and dry toast french bread in the oven on 350. I then grate my cheeses. I use sharp cheddar, mozzarella and Swiss cheese All ready to put into crocks! I scoop a couple ladles into a crock. Add toast and top with cheese. I then put into the broiler for a few minutes to melt and brown the cheese.  Enjoy!
