Shepard's Pie

OK so, maybe it doesn't look that delectable but it WAS! Very tasty, and perfect winter comfort food!

I cut up potatoes and put them in water to boil to make the mashed potatoes. In the meantime I browned up about 1 1/2 lbs of ground beef. Added onion celery and carrots, a cup of water, and 2 beef bullion cubes. I also added some frozen corn. You can add peas as well. I cut up 2 springs of Rosemary and some fresh Thyme added to the meat mixture. I then added a packet of brown gravy and a little bit more water and let simmer. Oh and salt and pepper to taste.

Preheat oven to 375.

While that was simmering I drained and mashed up the potatoes. Adding milk, butter, and sour cream. Salt and pepper to taste.

Put the meat mixture in the bottom of a casserole dish and then spread the mashed potatoes gently on top. Bake in the oven for about 20 minutes until bubbly. Sprinkle a generous amount of shredded cheese on top bake an addition 5 minutes.

Serve!

Jellied Cranberry Sauce

I grew up having cranberry sauce from a can on Thanksgiving day. I loved it! I've tried whole cranberry sauce and wasn't a fan. Then I realized I can make my own cranberry sauce! Chicken Parm

Ok, It's Chicken Parm night. Not that it's a special night or anything but.... I made a pot of sauce the other night before I started this blog. I had used plum tomatoes from the garden. The last of them as it is November but I had blanched and pureed them and then froze it. Anyway, you can't make Chicken Parm without homemade sauce. Anyway, I take out 3 bowls, one I put flour in, add some pepper, the second I scrambled 2 eggs with a clove of garlic and the 3rd I added breadcrumbs Italian seasonings and grated parmesan. I cut the chicken breast put them in a plastic bag and pound them out thin. Dredge the chicken in the flour, eggs, and then breadcrumbs. Fry in olive oil Put them in baking dishes I spread sauce on the top, flipped it over and put sauce on the other side. Sprinkled some parmesan cheese on them grated mozzarella. Bake in the oven 350 until cheese is melted and bubbly. Of course, I cooked up some macaroni and topped with sauce for a full meal.  ...

Cajun Shrimp Alfredo

This is super yummy and can have as much or as little kick as you choose. You can also use chicken in addition or instead of. I put the water on for the pasta as I started the Alfredo sauce. For the alfredo, I used a saucepan 3/4 brick of cream cheese and milk about a cup. I use a whisk until the cream cheese is melted in the milk. The milk thickens and I add milk until I get the correct consistency. I added about 1/4 cup of heavy cream as well. I stirred in 3/4 cup of parmesan cheese a quarter cup at a time. In the meantime, in a separate pan, I sauteed the shrimp in butter. Added garlic, a couple cloves, and cajun seasoning, again to taste, while cooking. I also added a can of diced tomatoes, well drained and also a teaspoon of pesto. Add the shrimp to the drained cooked pasta and then pour on the alfredo, stir and serve!
